Step 1: Prepare the Beef

  • Start by seasoning your beef tenderloin with salt and pepper. Sear it in a hot skillet for about 2-3 minutes on each side until browned. Let it cool before slicing into bite-sized pieces.

Step 2: Make the Mushroom Duxelles

  • Finely chop mushrooms, shallots, and garlic. Sauté them in a pan with olive oil until all moisture evaporates. Stir in fresh thyme and season with salt and pepper. Let it cool.

Step 3: Roll Out the Puff Pastry

  • Thaw your puff pastry sheets and roll them out on a floured surface. Cut them into squares large enough to wrap around your beef pieces.
