Instructions
 

  • Set your oven to 375°F (190°C) and let it warm up while you prepare the ingredients.
  • Wash and slice 4 medium zucchinis into thin rounds. Don’t worry about perfection; rustic is charming!
  • In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and 2 minced garlic cloves. Sauté until fragrant and translucent, about 5 minutes.
  • In a large bowl, combine the sautéed veggies, sliced zucchini, 1 cup of cooked quinoa (or rice), 1 cup of shredded cheese, and 1 teaspoon of Italian seasoning. Stir until well mixed.
  • Grease a 9x13 inch baking dish with a little olive oil or cooking spray to prevent sticking.
  • Pour the zucchini mixture into the prepared baking dish, spreading it evenly. Top with an additional ½ cup of cheese for that golden, bubbly finish!
  • Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
